Oatmeal Banana Bread

For the past 2 months, every Saturday morning I wake up early and make the Hubs and I some Oatmeal Banana Bread from scratch. I look forward to it on the weekends and there's always enough for breakfast the next morning too! The best part, besides the heavenly aroma that floods the house, is knowing how healthy it is. Seriously, it's probably the healthiest thing we eat all week. And the Dunkin Donuts coffee we always drink with it, makes it that much more amazing.

Cooking spray
2 cups whole wheat flour
1 cup plain regular oats (you can also use the instant packets)
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups Greek yogurt
2 large eggs, lightly beaten
3 tablespoons butter, melted and cooled
1 teaspoon vanilla extract
2 mashed bananas (the brown mushy ones are best)

Heat oven to 350°.
Coat bread pan with cooking spray.
Combine flour, sugar, oats, baking powder, baking soda and salt in a bowl.
Combine mashed bananas, yogurt, eggs, butter, and vanilla in a second bowl.
Combine yogurt mixture into dry mixture..
Spoon into bread pan.
Bake about 45 minutes or until knife inserted into center comes out clean.
Top with margarine and a side of coffee!
